Making lunch fun, with Hotdog Spaghetti, and Cheesy Salmon Quesadilla

So, meals around the Bee household have been a little on the boring, and a little on the cheap side lately. Times are tough for everybody, and food is expensive, so we've been having alot of peanut butter and jelly kinda meals the last few weeks. That gets old fast! Well, since I just started this blog, I thought what a great way to not only spend more time with my girls, but also make meals a little funner, and blog about it long the way!
Food doesnt have to be boring and dull even on a budget, making an affordable meal fun is not hard at all! 
So today in a break from boring and dull normality we decided to head to our favorite place, Pinterest!
Recreating a fun, silly meal for my 5 year old Nem, and a delicious cheesy Mexican treat for my Pescatarian 12 year old Clo!

Hot dog Spaghetti
Start with noodles and hot dogs!
 Get some little people to help you with the fun part, poking the stakes through the dogs!

 Thumbs up for great work! Now its time to boil these bad boys! 7-9 mins should do it, keep checking for tenderness.
 The finished result! Delicious hotdog spaghetti!

Now for my 12 year old, well she hasnt eaten hotdogs or any meat for about 2 years now! So I thought Id make her one her favorites, a quesadilla, but mix it up a bit and add some fish. She loves salmon and grabbed this easy single serving pack while we were out shopping. I wasnt exactly sure what I was gonna do with it at the time, but it was just enough for a cheesy quesadilla for one!

Cheesy Salmon Quesadilla 
All I used was shredded cheddar cheese, pink salmon, salsa, and tortillas. 


I added about a tbsp of salsa to the salmon, of course this is totally optional. I thought it would give the salmon more of a Mexican flavor rather than being just plain.

Add lots of cheese! Yummmmm!! Spray lightly with Pam olive oil and fry on both sides over a medium heat, checking the bottom for browning, and also peeping inside to see if the cheese has melted. Took about 7 minutes for this one.

Sprinkle with sea salt, and Voila! You're done! Add your choice of sides, I think this would be amazing with quacamole as well!




 Both girls enjoyed their lunches today! Yey me! Nem was a little apprehensive of the spaghetti in the hotdogs, so she pulled it out and ate them separate! Clo dipped her triangles into salsa and thought it was fantastic. Score one to Mom!
